Between 2 businesses, 2 kids, & a husband who is gone 60+ hours/week, some semblance of sanity must exist. This has unfolded with meal planning! It's about the only way I feel control over the madness that is my life these days. Feel free to just copy my plans if you are looking for some sanity!
I plan my meals in advance... by at least a week, sometimes more. I have found that this way I spend WAY less at the grocery store as well. Luckily, we are a family of leftovers, so we eat those for lunches, or for dinner again. I also make meals that freeze well in double or triple batches so that we have a quick dinner another night. I make stock when I have bones, I freeze extra noodles, I make spaghetti sauce by the gallon, & I purchase all my meat in bulk. I will put an “*” next to the items I am simply getting out of my freezer so that you can see for yourself that grocery savings you could have.
WEEK ONE:
Sunday: Chicken Enchiladas*
Monday: Moroccan Lamb Sausage + Farro
Tuesday: Turkey Stew Over Biscuits
Wednesday: Leftovers
Thursday: Mostocolli & Meatballs*
Friday: Naan Pizza
Saturday: Out to Eat!
This week was incredibly cheap for groceries. Of course, we have the usual eggs, milk, fresh fruits & vegetables to purchase, but as for dinners...almost everything was in our freezer.
The enchiladas were made previously and in the freezer ready to go.
Moroccan Lamb sausage was from our previous Club buy.
Turkey Stew was made with stock & turkey that was made after Thanksgiving.
Mostocolli & Meatballs was made previously and in the freezer.
Naan Pizza, I always have naan in the freezer, and I utilize all the produce that’s about to go bad.
Saturday....time to reward myself for a job well done and let someone clean up after me!
