pulled pork

With the recent Pork Buy, I researched to find the best cut for Pulled Pork. In the past, I've honestly just bought what was on sale, but since we switched to Organic only for meat-I haven't felt as motivated to purchase an expensive cut.

My research actually showed that Country Ribs are what you should use for Pulled Pork, so I signed myself up for 2 of them with the Pork Buy.

I'm taking the easy way out of this one, and throwing it in a crock pot.

Cover the pork halfway with water, add 1/4 cup of the rub mix, pop a lid on it, set on low and walk away for 8-10 hours. I actually set this at 7pm and didn't get to it until 8am. It was perfect when I got to it.

My favorite Rub Mix can be found here: https://www.kitchentreaty.com/sweet-smoky-bbq-dry-rub-mix/

I used what I had on hand...I literally handed ingredients to my 3 year old and had her combine. So the exact mix isn't, well...exact.

I mixed the following (in the picture) with brown sugar and a splash of vinegar:

Once finished, take the pork out and shred. 2 forks works, but my favorite tool is the ChopStir. Take all the bones & excessive fat out. After 10+ hours, any connective tissue would have turned into pulled pork by now-so discard anything gelatinous.

Taste your pork and see what it is missing.

At this point, everyone will have a different idea, so here are some different ways of finishing it:

Mix 2T of the Rub Mix with White Vinegar and add

Mix 2T of honey with 1/4 cup of warm water and add

Top with your favorite bbq sauce

My absolute favorite way to eat Pulled Pork is on top of potatoes. Even better-twice baked potatoes. Even better-twice baked potatoes with broccoli!

Since I bought these Country Ribs through the Pork Buy...they are Step Five

{ ANIMAL CENTERED, ENTIRE LIFE ON SAME FARM, NO PHYSICAL ALTERATIONS, PASTURE CENTERED, ENHANCED OUTDOOR ACCESS, ENRICHED ENVIRONMENT,

NO CAGES, NO CRATES, NO CROWDING,

($6.50/lb at 2.04lbs) I paid $13.26 for them.

Whole Foods currently has Country Ribs Step One { No Cages, No Crates, No Crowding } for $4.99/lb
