cauli mac n cheese

A healthier twist.... Mac N Cheese with cauliflower cheese sauce!

I made a simple bechamel and added pureed cauliflower for some grit. No one even knew!

I paired with burgers for dinner. With the leftovers, I added some cooked bacon from Jake's for a standalone meal.


1lb pasta cooked al dente

4T butter

4T flour

2.5 cups warm milk

1 head of cauliflower

1 cup Shredded Cheddar

1/2 cup Parmesan Cheese

S&P

Optional 4 strips of bacon cut and cooked


Cauliflower:

Cut all the "flowery" parts of the cauliflower off and steam for 5 minutes. Place on a cutting board and "shred" or "rice" You don't want it over cooked, so have it be al dente!


Sauce:

Mix over low heat the butter and flour

Once combined, slowly add the milk and whisk continuously under you have a cream. Add the cheeses and cauliflower and continue to cook for about 5 minutes. Taste....then add salt & pepper as desired.


Pour over noodles to combine and serve!
