Cheesy Beefy rice


This is a new one for our family, and has become a staple. This can be made with rice or pasta, but we prefer it with rice.


30 minute meal-Serves 4-6

1 cup dry basmati rice-or- 8oz of pasta of choice (something ridged works best)

1lb Ground Beef

1/4 cup Worcestershire Sauce

2 Carrots chopped

1/2 Yellow Onion copped

3 Handfuls of Baby Spinach

2 Chopped Garlic Cloves

1 Cup Shredded Mozzarella Cheese

1/2 cup of water (if making pasta, reserve some of the starchy water for this)


I rinse the rice at least 3 times prior to cooking, and use 1:1 ratio of rice & water. Bring to boil, pop on a lid & turn to low and let simmer for 20 minutes. Once finished, take off of the hot burner. Sometimes I will cook this in the morning & just leave it lidded on the stove to save time later.


Chop the carrots & steam them to al dente. You can do this however you choose, I prefer to do it in the same pan I plan to cook the beef in with some water & a lid for about 10 minutes on low heat.


Set the carrots aside with the chopped onion & garlic.


Add beef to the pan and cook about halfway, while mincing it up. Once half cooked, pour the grease out and return to the stove.

Add the carrots, onions & garlic. Toss some salt and pepper to this & finish cooking.


Add the 1/2 cup of water & Worcestershire Sauce, mix around well, then add the rice.

Cook on low for about 5 minutes.


Right before serving, add the mozzarella cheese and stir around.


My family really likes garlic, so I also tend to add some garlic powder at the end as well.


Voila. Super easy, and even the kids like it. The cheese really helps the rice stick together so it isn't a messy meal for babies and toddlers!
