Tikka Masala is such a lovely dish (& easy) to make! I tend to throw extra vegetables in mine to get everyone their fill. I take chicken and stew it with a jar of Tikka Masala sauce (I love the one from Kroger) Once well cooked, I shred the chicken and add vegetables. I like cubed sweet potatoes, cauliflower & peas. I found it's best to steam the sweet potatoes ahead of time & add, but to let the peas and cauliflower stay a bit al dente. I pour this stew over basmati rice and add some yogurt & a piece of naan. I'd love to make my own Tikka Masala sauce...if you have a recipe you love, please share!
The turkey burgers are flavored with lots of fresh oregano, garlic & feta cheese. The feta cheese from our local club is the best! A little goes a long way. I don't even put my turkey burger on the bun, but the husband & kiddo do. I've found that a cracked wheat bun goes best with this burger...but I've been thinking about putting in in a pita!
As for the stirfy...a friend taught me the trick of cooking rice in coconut milk rather than water....game changer! I use Trader Joe's frozen hodge podge mix, throw whatever protein I have laying around and saute in sesame oil, garlic & coconut aminos.
