Beef Stew is not my husband's favorite, but it is one of mine. I take a sirloin steak from my deep freezer, thaw, toss in flour and brown with some butter. I add homemade beef stock, onions & mushrooms, cover and forget about it for a couple hours. Then I add carrots & potatoes. Forget about it again. Then add a bag of frozen mixed vegetables. Forget about it again. I change up the herbs each time I cook it depending on how I feel. The usual suspects include rosemary, thyme, tarragon, oregano and/or marjoram. Then we eat it!
Sweet potato & black bean burritos are super easy. I braise the sweet potatoes in red enchilada sauce, then toss in some black beans, wrap in a burrito with some cheese and quickly grill. Cojita cheese is my favorite to crumble in this combo. If we are eating right away, I like to toss in spinach and cilantro as well.
From a previous pork meal, I grab some leftovers from the freezer, add some apple cider vinegar, a little maple syrup, cinnamon, garlic, cumin & water and let the pork turn to shredded pork. Meanwhile I bake some potatoes, gut them and make a creamy potato mash with butter & sour cream. I add the pulled pork and some cheese...then bake at 350 for 20 minutes. This is seriously one of my favorite things to eat. I usually have a salad on the side with this one, but I've also been known to toss some peas or broccoli in the potato mash as well. I suppose spinach would be a good one too!
